Smoked Fish

Starters Puddings Other


1 Litre Water
125ml salt
65ml brown sugar
20ml lemon juice
1 tsp garlic powder
1 tsp onion powder
1 tsp allspice
1/2 tsp white pepper
Filet or butterfly of fish (eg salmon)


Mix the ingredients together until dissolved.
Add the fish so it is covered and leave for 30 minutes.
Switch on the oven with only the fan running and dry the fish for 1 hour.
Smoke the fish in a BBQ at 150 C for 20 minutes. (put oak chips over the heat source and the fish offset from this position)
